My Favorite Soup

Now that the weather is getting colder, I always like to turn to making my favorite soup. Soup is so comforting. I came across this a few years back and it is just so good so I have to share!! It's full of so much flavor and so easy to make! I'll be eating it the next few days.

White Bean Kale Kielbasa Soup 


These are the ingredients for a big patch, if you want a small patch I would do 1/2 the ingredients. I have tweaked this to my own recipe.


Ingredients

24 oz beef Polska kielbasa, sliced
32 oz carton of chicken both
2 cups of water
2 15.5 oz cans of white kidney beans (cannellini beans or your choice of bean)
A bushel of kale
Salt and pepper to taste

Instructions

Optional: You can brown the sliced sausage in a sauce pan using olive oil or just put in sliced sausage directly into pot without browning. (I just put them in pot)

  1. Add chicken broth and the 2 cups of water to large pot over medium heat
  2. Add in sausage slices, white beans and kale (off of stalk)
  3. Cover and bring to a boil until kielbasa, beans and kale are tender
  4. Add salt and pepper to taste
You can always finish it off with a side dish of your favorite bread.
Let cool and enjoy!
See- easy! And so filling and yummy!
Don't forget to refrigerate leftovers to save.
